Easy Pork Belly Recipe from a Pro

Chef Dana Liljequist, Owner of Lily Pad Catering, was trained by Gaggenau in the new AUTCOhome kitchen, and he’s an enthusiastic fan. “What I love about Gaggenau is that it takes all the different cooking methods [bake, broil, braise, steam, etc.] and enhances them. It also allows you to use multiple methods at one time. You can bake a piece of fish, while adding 60% steam, and cook it perfectly in half the time.”

Liljequist shares his recipe for the perfect Pork Belly:

5 lbs Pork Belly 

½ cup Kosher Salt

½ cup Sugar

½ cup Brown Sugar

2 T Cinnamon

1 T Pink Curing Salt

Plum Sauce

Mix all of the ingredients together and rub over the entire pork belly. Wrap tightly and marinate in the refrigerator for 48 hours. Bake at 325 degrees Fahrenheit for three to four hours. Remove from the oven and cut into bite size portions. Top with plum sauce of your choice and and serve!
